Biscuit and Cookie Line Equipment: What a Growing Bakery Needs

Most biscuit and cookie operations grow the same way. You start with a mixer, an oven, and hands moving trays. Volume climbs, orders get bigger, and the manual steps — filling, cooling, coating, moving product between stations — become the bottleneck.

This guide covers the equipment a growing bakery adds as it automates those steps. We are direct about where our catalog starts and stops: we do not build dough mixers, forming machines, or baking ovens. What we do build are the filling, cooling, coating, and handling stations that turn a baked biscuit into a finished, packed product.

Where our catalog starts — and where it doesn't

A full biscuit or cookie line runs roughly in this order: dough preparation, forming or depositing, baking, cooling, filling or sandwiching, coating, and handling toward packaging. Not every station is ours, and we would rather say so up front than sell you a line we cannot deliver.

Dough mixing and dough forming are outside our catalog. So is the baking oven — the single most specialized machine in the line, and one we do not manufacture. For those stations you work with a specialist oven and forming supplier, and we integrate our equipment downstream of them.

What we supply is everything the biscuit meets after it leaves the oven: cooling, filling, cream preparation, chocolate coating, and conveying. If a step you need falls outside the machines described below, we can scope it as a custom build at our Casablanca facility rather than pretend a standard model exists. Honesty about scope is how a line actually gets commissioned.

Cooling: getting product off the oven at the right temperature

A biscuit leaves the oven hot and soft. It has to reach a stable, handleable temperature before it can be filled, sandwiched, or coated — rush it and cream melts, chocolate blooms, and stacks deform. This is where a cooling tunnel earns its place in a growing line.

Our cooling tunnel, the M-590, runs 5,000–9,000 kcal/h through a 20-metre tunnel. It gives controlled, even cooling for product coming off a bake or a coating step, and the tunnel length is matched to your line's output rather than fixed. A faster line needs more tunnel to hold the same dwell time.

Filling and sandwiching: the NZ-8 depositor

Cream-filled and sandwich biscuits are where manual filling breaks down first. Depositing jam, honey, or cream by hand caps your throughput and your consistency at the same time. A dedicated filling machine solves both.

Our cup and container filling machine, the NZ-8, runs up to 2,280 kg/h and is configured with 1, 2, 4, or 8 heads depending on the throughput you need. It handles spreads, liquid sauces, powders, jam, and honey — the same family of products a biscuit line deposits between two halves or into a cup. You add heads as volume grows rather than replacing the machine.

Cream preparation: mixing the filling itself

A filling machine is only as good as the cream feeding it. As batch sizes grow, preparing filling by hand or in an undersized mixer becomes its own bottleneck, and inconsistent cream shows up as inconsistent biscuits.

Our pre-mixer, the M-1200, produces 1,000 kg of homogeneous mix per 15-minute cycle. For a biscuit line it prepares the cream, chocolate, or spread that the NZ-8 then deposits, in batches sized to keep the filling station running without pauses. It is stainless, hygienic, and quick to clean between recipes.

Chocolate coating and handling

Coated and chocolate-covered biscuits are a common next product for a bakery adding value to a base line. Enrobing — running product under a curtain of tempered chocolate — is a station we build to order rather than as a fixed catalog model, sized to your product dimensions and line speed. We scope it against your biscuit format and the throughput the rest of your line runs at.

Coated product then needs cooling again to set the chocolate, which routes back through an M-590 cooling tunnel before packaging. Tying the stations together is handling. Our feeding and alignment conveyor, the M-100, moves 1,000 pieces per minute from an oven or tunnel exit toward sorting or packaging. It keeps biscuits aligned and evenly spaced so the next station receives them in order rather than in a pile — the quiet piece of equipment that makes an automated line actually flow.

Building the line in stages

A growing bakery rarely buys a whole line at once, and it does not have to. The sensible path is to automate the bottleneck first — usually cooling, then filling — and add cream mixing, coating, and handling as volume justifies each one.
