Chocolate Cooling Tunnels
A cooling tunnel does one job: it takes product straight off the moulding line or enrober and cools it, under control, until the chocolate has set. The M-590 runs 5,000–9,000 kcal/h of cooling capacity across a 20-metre tunnel (L 20000 × W 1400 × H 1300 mm) on 24 kW. Product enters warm and fluid, and leaves with the crystalline structure that gives moulded and enrobed chocolate its snap.
The tunnel is where cooling stops being incidental and becomes a controlled step. Pull heat too fast and you risk stress cracks and bloom; too slow and the line backs up or the product deforms. We configure the tunnel to your line's output and product, so residence time matches what the chocolate needs — the 20-metre length is the catalogue configuration, and tunnel length is set to the throughput it has to keep up with.

Straight answer
What a cooling tunnel does not do
A cooling tunnel cools; it does not temper. It sets the crystalline structure that tempering established upstream — if the chocolate enters out of temper, the tunnel will chill it, but it cannot correct bloom or a poor crystal seed. The M-590 is built for continuous line product moving through it, not for batch cooling of loaded trays parked in a chamber.
